I recommend <a href="http://www.horde.org/imp/" rel="nofollow">IMP</a> for webmail. I hear that BIND's a bitch to set up, and can cause you serious issues if you don't know what you're doing. With that said, I still havent a clue what you'd use other than Bind. I used rsnapshot for backup.
